Hi, I've bought a few Cory sterbai, but never seem to have luck.

They seem active, feeding, swimming, etc but twice now in the last two weeks I've come home and one has been dead.

I have three right now after the latest loss today. I'd like a small school since they seem very social, but I'm hesitant to add another right now.

It's a 35 gallon hex square back that is live planted. The rest of the fish are relatively mild tempered (mostly livebearers). Any tips on these guys?

Cory cats (and other catfish)
need to take a bubble of air once in a while
...althought it is unlikely, it is possible that if you have a 35 hex (tall) tank that was filled practically all the way to the hood
your corys might not be able to get their air...
another more likely possibility is that they are not getting enough food
...I sometimes caution people about over-feeding...
if you take that too literally it might be that
not enough food is going to the bottom...
other than that I don't know...
Cory Barbatus (southern Brasil) is sensitive to high temperature (they die above 84 degrees)
but Cory Sterbai (Central Brasil) should be fine from about 69 - 82 degrees...

I'm thinking food may be an issue. Mainly because a few of the livebearers are Goldbreasted splitfins (Ilyodon furcidens) and they, at times, seem forceful in scouring the bottom for food once I drop shrimp pellets, etc in.

May need to transfer them.
